Present scenario malnutrition is the major issues in human society. It is affected the human health with simultaneous working efficiency. It occurs unavailability of balance diet. Vegetables Play the Significance role due to rich sources of nutritive food. Vegetables provides carbohydrate, Protein, Minerals, Fiber & Vitamins. But due to intensive cultivation of several crops continuously from eight decades of Nineteen Century has steadily eroded the capacity of plant nutrients and affected the systems of macro and micro-nutrients synthesis. The quality and quantity of the vegetable, cereal, and fruit crops are not only influenced by the agrochemical applications but also by the stage and type of crops involved in the recycling of organic matter. Deficiency of micro-nutrients in soil also affected the produce quality such produce used as food also affect the human health. Several studies also observed that macro and micro nutrient deficiencies are widely observed in different crops. These deficiencies may affect human health and are associated with diseases and malnutrition. Bio fortified horticultural crops play a crucial role in addressing global malnutrition and improving public health. By enhancing the nutrient content of commonly consumed crops, bio fortification provides a sustainable and cost-effective strategy to deliver essential nutrients to vulnerable populations, thereby contributing to global health and development goals. Bio-fortified crops are plants that have been bred to increase their nutritional value, particularly in terms of vitamins and minerals. This enhancement can be achieved through traditional breeding techniques or modern biotechnological methods. The primary goal of bio-fortification is to address micro-nutrient deficiencies in populations that rely heavily on staple crops for their diet.
