Abstract

Agra city was divided in 5 zones namely, Eastern, Northern, Western, Southern and Central zones. Total milk supply in Agra city was estimated 777219 litres of milk per day, out of this, organized sector contributed 194000 litres per day whereas, unorganized sector contributed 583219 litres of milk per day. Over all utilization of milk in Agra city accounted 90.08 per cent as fluid milk, 9.92 per cent of milk was utilized for the manufacturing of various milk products. Dahi and Khoa accounted almost similar percentage ofmilk utilization, which accounted 2.07 per cent and 2.05 per cent, respectively. Other milk products namely Tea, sweetened milk, Paneer, Gheel Butter, Chhana, Ice-cream and Kulfi accounted around 5.50, 0.65, 1.30,0.40, 1.10, 1.30 and 0.55, respectively.
