Food processing is a fast growing sector in the world's economy. Potato processing in organized sector started about a decade ago. Potato can be processed into relishing, mouth-watering, value-added fried and non-fried food products having longer shelf-life. Development of three varieties of potatoes viz., Kufri Chipsona 1, Kufri Chipsona 2 and Kufri Chipsona 3 has greatly enhanced the demand of potato. Major processed products of potatoes are fried products (potato chips, French fries,) and dehydrated products (potato flakes, potato granules, dehydrated chips, potato flour). Potato starch, canned potatoes, dextrose syrups are other valuable products. They are now being used by the industries for making chips and French fries. The demand for potato chips, French fries, flakes etc. is increasing day by day. To meet the burgeoning demand, potato processing is emerging as a fast growing industry and increasing avenues of entrepreneurship.
