The potato products manufactured by various firms were found to get spoiled within 45 to 60 days, as compared to their reported shelf life of 130 to 180 days. Therefore, from consumer point of view, none of the product was found to have good quality character. The spoilage micro flora which influenced the shelf life of the products were characterized as: Rhizopus sp., Penecillium sp., Aspergillus sp., Alternaria sp., Bacillus sp., Clostridium sp., Micrococcus sp., Entrobacter sp., and other unidentified Gram positive and gram negative bacteria and fungi.
