Abstract

Sprout growth and sugar accumulation during storage at 5% CO2, 18–20°C and 90–95% RH were studied in Kufri Chandramukhi and Kufri Jyoti. The number, weight and volume of sprouts, reducing and total sugar contents increased after 60 days of storage under these conditions as compared to control in both the varieties. Thus 5% CO2 stimulated sprout growth and increased sugar contents.
