A market survey conducted at Shimla, Chandigarh and Mohali revealed that potato chips, potato sticks and potato bhujia were the most common processed products available in the market. These products were prepared by small-scale local processing units in the unorganised sector depending largely on human labour and generally not using machinery. The quality of the product was poor due to the poor quality of potatoes used, thin slices and unsatisfactory packaging.
