Potato processing quality as influenced by date of haulm cutting

Abstract

In a study conducted on chemical maturity of processing varieties at CPRS, Modipuram (NW plains), cvs. Kufri Chipsona-1, Kufri Chipsona-2, Atlantic and Fritolay-1533 yielded good quality chips from 90 and 100 days old crop, while from 80 days crop only Atlantic and Fritolay-1533 gave acceptable quality. Ideal sucrose ratings were not achieved in any cultivar even at 100 days after planting. Room temperature storage of tubers resulted in deterioration of chip colour.
