The role of variety, cultural methods, diesase control and post harvest treatment has been considered in relation to their influence on quality of ware potatoes in India. Shape, size, depth of eyes, skin colour, physiological defects like cracking, and resistance to tuter-borne diseases as well as keeping quality can be controlled by breeding suitable varieties. The yield of clean potato tubers and desirable grade could be agronomically manipulated. The diseases, viz. black scurf, common scab, charcoal rot and incidence of brown rot, which impair quality of ware potatoes, be can also controlled by adjustment of dates of planting and lifting, adoption of fast tuberizing varieties combined with pre-mature killing of haulms and seeds treatment with chemcals.
