Abstract

Tubers of Eight potato varieties were evaluated for chip colour and processing characteristics before and after storage (105 days) in pits and heaps. All the varieties produced highly unacceptable chips (5.5–10 scores) before storage. Chip colour improved significantly (4–6 scores) during storage of tubers in both the storage systems. Chips made from tubers stored in pits were far superior in colour, taste and texture however Kufri Badshah and Kufri Sutlej produced chips of marginally unacceptable colour. During storage, the concentration of reducing sugars decreased significantly and the amount of sucrose increased manifolds in pits and heaps.
