Post-harvest and pre-holding changes in sugar content of potatoes

Abstract

Potato tubers of cvs. Kufri Chipsona-1, Kufri Chipsona-2 and Atlantic harvested in first week of February were monitored for changes in reducing sugars and sucrose content for 40 days at room temperature. Reducing sugars decreased after 20 days of storage and changes in sucrose content were also observed after 20 days of storage. There was no significant change in dry matter content of potatoes. The period of 10 days after harvest could be said to be safe as far as sugar balance in potato tubers is concerned.
