Relationship between under water weight and specific gravity, dry matter and starch content of potatoes grown in India*

Abstract

The under water weight (UWW), specific gravity (SG), dry matter (DM) and starch content of potatoes were determined in tubers grown at Kufri, Jalandhar, Modipuram and Patna. Linear regression equations and correlation coefficients were worked out for different pairs of values, for each location. The regression equation for Kufri (hills) was different from those for other locations in the plains. Regression equations for the relationship of UWW with SG, DM and starch content are presented in this paper. Based on these equations, a conversion table has been developed for the first time for potatoes grown in India, for the benefit of the potato processing industry.
