Abstract

The study was conducted at Meerut (UP), Indore and Ujjain (MP), Deesa (Gujarat) and Sainthian (WB) to understand the consumer perceptions towards CIPC treated potatoes for table purpose vis-à-vis cold stored potatoes. Clear differences in consumer preferences were observed with respect to appearance, time taken for peeling and cooking, texture and taste. While 95% of the respondents at Deesa preferred cold stored potatoes, which were sweet in taste, 94% of the respondents at Meerut preferred CIPC treated potatoes, which were not sweet in taste. At the other three locations, the preference was for CIPC treated potatoes (about 65%). In view of the consumers' preference for CIPC treated potatoes, storage of potatoes at 10–12°C with CIPC treatment can be helpful in providing the consumers potatoes, which are not sweet in taste, during the summer and rainy seasons.
