Abstract

Tomatoes are the widely used vegetable all through the world and a lot of research has been carried out. But little we know about the peel or the skin of the tomato. The objective of this present study is to compare the phytochemical constituents present in the ethanol and aqueous extract of peel and pulp of tomato both qualitatively and quantitatively. Further confirmation of the presence of these secondary metabolites were done using Histochemical localization. The results confirmed the presence of Alkaloids, Flavonoids and Phenols in considerable amounts. Surprisingly the content of these bioactive compounds were in high concentration in peel when compared with the pulp. The presence of these compounds may be the reason for the medicinal properties of the tomato.
