Abstract

Ice cream is a frozen dairy dessert that is made from products such as cream (or substituted ingredients) combined with flavourings and sweeteners. Herbal ice cream is gaining more popularity over synthetic products because of their functional, nutritional and pharmacological activities like gastrointestinal health, hypoglycaemic, immunomodulatory, anti-stress, analgesic, antipyretic, anti-inflammatory, antiulcerogenic, antihypertensive, radioprotective, antitumor and reinforcement of the immunological system.
