Abstract

This review presents the current status of research related to the milk protein powders and deals with the description of major milk proteins powders according to their composition, production and use in food industry. Membrane filtration technologies are capable of creating entirely new, more functional food products and reduce transportation costs. An initial survey of membrane manufacturing companies determined the added cost to produce such functional food products to be 2 to 6 per cent of the existing retail price for similar standard dairy products.
