Abstract

Functional Sandesh was prepared from cow and coconut milk mix in the ratio of 3:2 with 30% sugar & 0.1% sorbic acid. Theprepared product had good flavour, body & texture and overall acceptability. The sandesh was kept at ambient (30±1°c) and refrigeration temperature (7±1p c) for storage study. The moisture content (%) decreases whereas titrable acidity and free fatty acid of the mix sandesh increases with the increase of storage period. There was no moderate change in HMF valuewhereas the changes in Tyrosine value is more rapid at ambient temperature than that of refrigeration temperature. The product had good acceptability up to 16 days but after that its quality started deteriorating.
