Abstract

The study was undertaken to investigate the fungal pathogens present on the most popular street food Panipuri sold indifferent parts of Dhubri town, Assam, India. Ten sample of Panipuri were aseptically collected from 5 public places of Dhubri town. Analysis as well as microbial examination of the samples revealed that the major fungal species which dominates the samples is the Yeast (Saccharomyces spp.). Other genera present are filamentous fungi Aspergillus spp., Rhizopus spp., Mucor spp. and Penicillium spp. It is suggestedthat proper handling, hygienic conditions must be practiced to avoid any food borne diseases in future.
