Retort Processing of Omega - 3 Enriched Kulfi Concentrates

Abstract

Kulfi is a popular Indian frozen dessert prepared from concentrated sweetened milk of either cow or buffalo with or without added nuts and flavors. Fish oil is the richest source of long-chain polyunsaturated fatty acids (PUFA) of omega-3 type. Retort pouch processing is a common method for in-container sterilization of foods. In kulfi concentrate, fish powder (0.25%) was incorporated. The F0 value of control kulfi, fish powder kulfi packed in non transparent and transparent retort pouch ranged from 3.8 to 4.4. The processed products were found to be commercially sterile supported by microbiological data. The acidity of control kulfi, fish powder kulfi packed in transparent and non transparent retort pouches had a significant decrease. There is no difference between non transparent and transparent pouch. Fish powder has poor sensory score when compared to control kulfi.
