Abstract

Marine LABs and their bacteriocins are receiving increased focus due to their unique potentialities in antimicrobial strategy and in biopreservation. The broad spectrum bacteriocin PSY2 produced by the marine Perch isolate Lactococcus lactis PSY2 inhibited Listeria monocytogenes. The bacteriocin showed remarkable stability to heat (70 to 121°C) and pH (3.0 to 9.0) and was partially purified by ammonium sulphateprecipitation. Tris-Tricine SDS PAGE revealed the molecular weight of the peptide to be approximately 3.0 KDa.
