Physicochemical characteristics of coconut kernels were studied with the aim of increasing the processing value of coconut palm (Cocos nucifera L.), the main income of most Indian farmers. Studies were undertaken on West Coast Tall (WCT) and Chowghat Orange Dwarf (COD) variety of coconuts. Analyses were concerned with Kernel weight, Kernel thickness, Kernel Diameter, oil content, proteins and soluble sugars content. The West Coast Tall variety had the greatest weight (318.1 g). Kernel thickness was maximum (13.28 mm) in WCT. The highest oil content of 68.30% was observed in WCT variety. Total soluble sugars, were maximum (7.55 g/100 g) in WCT fruits. These results indicated that the West Coast Tall has possibility of maximum utilisation in processing of coconut kernels.
