Abstract

An experiment entitled “Effect of pre-treatments and drying methods on physical parameter of dehydrated okra” was carried out during the year 2013–14 at Post Harvest Technology Laboratory, college of Agriculture, Dr. Panjabrao Deshmukh Krishi Vidyapeeth, Akola. The experiment was conducted in FCRD consisting of eleven treatments and three replications with two drying methods (cabinet drying and sun drying). Result indicated that okra slice dried at 55±2º C under cabinet drier recorded better result in moisture, time required for drying, dehydration and rehydration than sun drying
