Dried products today are used mainly as convenience foods and have long storage life at ordinary temperatures. The fortified fig powder can be successively prepared by the cabinet drying method followed by fortificationwith dispersion method. The fortified fig powder obtained by cabinet drying method was found to be superior in terms of yield, ease of processing technology, utilization of damaged fruits and cost. It was observed that the protein content of soy fortified fig powder was found to be 9.4%. The value of calcium found in ragi fortified fig powder was 97.2 mg/100gm and therefore it is rich source of calcium as mineral. Fortified fig powder was assessed for their cost of production. The production cost for 1kg of fortified fig powder was Rs.302.25/kg. However, comparison with market products showed that fortified fig powder was far cheaper.
