Abstract

Banana is a major fruit crop of Gujarat and India. To increase productivity of banana, to increase remuneration to farmers and improve quality, following studies were carried out during years 2010- 11 and 2011–12 at soil and water management research unit farm and PHT laboratory with two factors varieties and package of practices combinations for preparing various value added products from Banana fruits. Three different commercial varieties viz Grand naine, Mahalaxmi and Basrai were taken as treatments with three package of practices of banana viz Organic alone, INM (PFDC package) and inorganic alone as treatment combination with varieties. Data was analysed using large plot technique based on two year pooled data. Replications were taken as spot sampling method for convert fruits into value added products. Economics of different treatment combinations were also calculated using two year values. The recommended dose of fertilizer was 300 g N, 80 g P and 200 g K per plant were supplied as per treatment requirements. Different product from unripe banana viz Wafer and Flour; and from ripe banana fig, ketchup, puree and cheese were prepared using standard methodology. Results indicated that for all the quality parameters as well as sensory parameters Organic alone management systems showed an edge over the rest of the NMS. While grand naine variety was best suitable for the entire product. From net income point of view also all the product get premium price compared to rest of NMS.
