Abstract

Hardness and softness are the milling characteristics related to the way of endosperm breakdown. Grain hardiness is not a clearly defined parameters. It may be generally formulated as a resistance to plastic strain and cracking at a force concentrated on the surface of given body. several studies indicates that the grain hardness is controlled by the mainhardness locus (Ha). It is the key determinant for classification of wheat and end use quality.
