Abstract

Herbal ice creamprepared by incorporating medicinal herbs showed average of cost. Asparagus racemosus W, Asparagus adscendens R, Punica granatum L and Dactylorhiza hatagirea are popular medicinal plant and containing antimicrobial, flavour improvement and increase the shelf life of milk product. The present study is carried out to find the cost of ingredients and herbal powder inclusion in the ice cream. Ice cream was prepared by this method is subjected to sensory properties of herbal ice cream. The result found that indifferent treatment combination of herbal icecream having 2% level of pomegranate, asparagus, green asparagus and 3% level of salep orchid herbs powder was found to be superior in terms of overall acceptability over the other treatment combinations and 2% lavel of green asparagus was best sensory quality in overall treatment of herbal ice cream. The cost wise, herbal ice cream treatment combinations were also more economical as compared to the ice cream available in present day market. It is thus anticipated that herbal ice cream will in future provide additional benefits to consumers with respect to convenience, price and health.
