Abstract

Inspite of being the second largest producer of fruits, nearly 72% of fruits is wasted in India. Total fruits and vegetable processed in India is estimated to be around only 2%. With a high percentage of waste of fruits in processing, the value loss could be imagined. By minimizing wastage at the processing level, the return to processors and producers could be increased considerably. Cold storage comes to the rescue of the processors, but in the storage also nearly 15% of total processing waste is caused. By automation of the processing stage, wastage in fruits is found to be considerably controlled. Hence analysis of sources of wastage of fruits in processing industry is undertaken to suggest ways out to minimize this loss and improve the return for the processors. This research is confined to the fruits processing unitts in Tamilnadu, a leading producer of fruits in India.
