Abstract

This paper assesses the production and import of edible vegetable oils in india. The vegetable oil industry has over 15,000 oil mills, 600 solvent extraction units, 250 vanaspati units and over 600 refining units. They jointly employ over 1 million people and have a turnover of about US$17 billion. However, only 35–50% of capacity is being currently utilised. Oilseed production is vulnerable to vagaries of weather, as much of the acreage is located in the non-irrigated areas of the country.
