Abstract

In this present study, five fresh fruits (orange, mango, apple, grape and pomegranate) juices were prepared to evaluate some biochemical parameters. Total phenol, anthocyanin and acidity content were highest in pomegranate; total sugar and pH found highest in mango; total protein, calcium, potassium and vitamin-C contents were highest in orange; DPPH free radical scavenging activity was highest in apple after 30 minutes; catalase and polyphenol oxidase enzyme activity were highest in pomegranate among of five fresh fruits juices studied.
