Detection of Adulteration in Spices

Abstract

Spices and condiments are essential to the preparation of Indian food. A few self-centered manufacturers and marketers intentionally adulterate food goods to increase their profits. A typical consumer might not be sufficiently informed on the quality and purity of the food products he consumes. It is crucial that the various food products people buy are free from adulteration in order to ensure the safety of food. The goal of the current study is to determine the presence of common adulterants that are present in spices and condiments including hing, coriander, turmeric, and chilli powder. In the present study, 20 distinct samples of spices and condiments from branded, local, and loose varieties were collected to test for adulteration in these products. On a total of 80 distinct samples of spices and condiments, qualitative assessments were conducted. The findings showed that samples of red chilli powder had the highest level of adulteration (92%), followed by 16 samples of turmeric powder (80%), and 16 samples of coriander powder (80%).This study adheres to the guidelines set forth by India's Food Safety and Standard Authority, which makes it easier for consumers to spot prevalent adulterants in spices and condiments.
