Indian spices have long held a prominent position in the global market, renowned for their diverse flavors and aromatic profiles. Ensuring adherence to stringent quality standards is crucial for the successful marketing of these spices on both domestic and international platforms. To maintain competitiveness, innovation within the spice industry is imperative, particularly in areas related to preservation, processing, extended freshness, enhanced quality, and the development of superior flavor profiles. Furthermore, evaluating the ‘food mileage’ of individual spices is essential for understanding their impact on pricing, sustainability, and overall product quality. The widespread use of agrochemicals and suboptimal hygienic conditions during harvesting and post-harvesting processes contribute to contamination risks, encompassing physical, chemical, and microbial hazards. To mitigate these risks, a comprehensive, risk-based scientific management approach, beginning at the farm level, is necessary. This review paper aims to provide an in-depth analysis of the current status of the Indian spice industry, examining its domestic and export market presence, advancements in processing techniques, supply chain management practices, and the challenges inherent in the sustainable management of these valuable agricultural products..
